Overnight oats, how do I love thee….
I can’t remember where I discovered this luscious breakfast, but it has changed my life! The chewy oats soak in a base of milk, yogurt, and honey overnight, affording you a deliciously sweet and creamy morning meal that takes NO effort and minimal clean-up.
Though eating cold oats might be off-putting to some of you, I implore you to try it…just once. You won’t be disappointed.
- ⅔ c. rolled oats
- ¼ c. yogurt
- ¾ c. milk of choice
- ¼ t. salt
- ½ t. vanilla extract
- 1 T. honey
- 8 drops liquid stevia
- Additions: nuts, dried fruit, seeds, berries, banana, nut butter, chocolate chips
- Mix everything together in a bowl.
- Cover and refrigerate overnight.
- Enjoy in the morning with whatever additions you like!
This is my favorite, most basic recipe, so feel free to add your choice of mix-ins, such as fresh/dried fruit, nuts, seeds, nut butters, cocoa or carob powder…the possibilities are endless! I happen to enjoy it just like this….
This recipe is great for the upcoming summer, as it can be somewhat difficult to stomach hot oatmeal when it’s 90 degrees outside! I know there are other activities we’d prefer…
