What up peeps?! Time for another ‘What I Ate Wednesday’ with the lovely and humorous Jenn over at Peas and Crayons.
Today, in addition to telling you a bit about my workouts, I’d like to refer you to a few blog recipes I’ve tried and loved! So let’s begin with a bit of fitness! It’s been all about running and circuits for me this week. One of my favorite circuits that I tried this week looked like this:
25 jumping jacks
10 squat jumps
10 lunges (each leg)
8 burpees (hate these, but man they work it!)
15 push-ups (I do mine on my knees… :-D)
15 mountain climbers
30 second plank
This was adapted from one I found on Pinterest. I am loving that site! Even as I was typing this post, I got sidetracked by it. Does this happen to anyone else? You’ve got your new post open, waiting to be written, Twitter in another tab, Pinterest in a third, and maybe your email or another blog in a fourth. I can’t seem to stay focused!
On to the food!
Some of what I’ve been consuming….

…and beef and broccoli for dinner!
To get serious for a moment, one of the biggest reasons I started this blog was to (hopefully) offer readers healthy recipes that they’d enjoy…food that would make someone gasp in delight over the small amount of sugar or fat needed to make something taste good. Perhaps for all bloggers, whose focus is healthy food, we desire recognition for the creation of something unique and delicious, while at the same time good-for-you. With this post, I’d like to spotlight some of the recipes I’ve tried by other bloggers that have knocked my socks off! I hope to do this every so often because I try many recipes and want the purveyor to know how much I’ve enjoyed it! I will never negatively review something, as I want this space to be positive! Basically, I want to put out what I hope will come back to me in the future. So, now, if you made it through that, let’s get to some amazing recipes!
1. Hot Chocolate Mousse with Marshmallow Fluff, by Sketch-free Eating
Oh, man. If you are on a candida-type diet, or are just conscious of your sugar intake, you need to try this! Carob pairs especially well with the stevia in the mousse, and there’s no bitter after-taste like you might experience with cocoa. The ‘fluff’ while a bit different than traditional marshmallows, is still a delightful, thick treat atop the mousse. Sprinkled with cacao nibs, it makes for a great anytime treat!
2. Spiced Socca Pancakes, by Fit For the Soul
Yum! I’m not the biggest lover of protein powder, so it’s nice to have found a recipe for protein pancakes without it! Ellie uses chickpea flour in combination with oats and a little spice to make some great hotcakes! Could it be these might taste good topped with peanut butter syrup? Ahhhh….shameful plug.
3. Mini Brownies, by Purely Twins (aka Pure2Raw)….and the only one I took a picture of…
Are those not adorable?! These, my friends, are the bombdotcom! The twins call them sugar-free, but I added a bit of coconut sugar (about 3 T.) in place of the xylitol, as it agrees with me better than xylitol. These are so delicious! Soft and fudge-like, they boast a great texture, thanks to the amaranth, and a chocolatey, perfectly sweet bite!
4. Apple Protein Cake, by The Guiltless Life
Stevia-sweetened, healthy, low calorie, and high protein….and all with the word ‘cake’ in the title…what more could you ask for? I happen to love baked goods with cut-up apple in them, so this was right up my alley, as I knew it would be. It has a great consistency and a nice, warm hit of cinnamon. I even left off the cinnamon/sugar topping, and it was still delicious!
