Happy Firefighter Friday everyone!…at least that’s what it’s known as around here. 🙂
I’m super excited for today’s recipe! A lot of my Friday recipes are usually centered around meat, but this Friday is a special exception….
….this delicious no-bake granola bar takes less than 5 minutes to prepare and is healthy enough to be called breakfast. I made this for my husband as a midday snack, and some of his flattering comments included…..’delicious!’….’amazing!’….’it tastes like peanut butter cookie dough!’.
My 3-year-old even ate half, and she is one tough customer. 🙂
As I type this post (6 hours after their consumption), they are both asking for more! I tell you this not to brag, but to convince you to give it a try! You WILL NOT be sorry!
SINGLE SERVE PEANUT BUTTER GRANOLA BAR
2 T. peanut butter (I used salted) (I’m sure other nut butters would work as well!)
2 t. coconut oil
2-3 t. honey or maple syrup (I found 2 t. to be sweet enough, but my husband and Jade liked 3)
dash of salt
1/2 c. rolled oats
splash of vanilla
1/4 t. cinnamon
1 t. flax seeds, optional
1 T. toasted sunflower seeds, optional
1 T. dark chocolate, chopped, optional
In a small saucepan, heat the peanut butter, coconut oil, and sweetener just until melted. Stir to combine. Remove pan from heat and stir in the rest. It should look similar to this…..
It shouldn’t be too dry or too wet.
Pour onto a sheet of wax paper, and mold it into a bar shape with your hands. Roll the wax paper around the bar and twist the ends to secure, like so…
…pop that baby into the fridge (or freezer for faster results) until the coconut oil hardens and the bar sets.
Remove and enjoy!!!
You could make multiple bars and keep them in your fridge for an easy snack for you or your kids. It’s a great way to get some decent nutrition in a pinch, and if my kid will eat it, so will yours!
Fun fact I thought I’d share that this recipe brought to light….when I open a new jar of peanut butter, I dump out the peanut oil on top and replace it with olive oil….
…mix it well, and you will discover that, unlike other oils, it will not separate from the peanut butter. The extra-virgin olive oil also has many health-promoting effects, including reducing your risk of cancer and atherosclerosis. 🙂
