Inside Out Peanut Butter Cups

Beginning this blog has been one of the best decisions I’ve ever made. I’ve come in contact with so many like-minded people and been able to accomplish things I never thought I would.

Before having my first daughter, I held a job at Whole Foods in the grocery department. It was my favorite job…ever. I was surrounded by delicious, wholesome food while doing a physical job that I loved. I was recently invited by Whole Foods to view the opening of a fancy new store here in Tucson…not for my previous work experience, but because of this blog! I was able to take my husband and girls with me, and it turned into a memorable event for us! Here are a few highlights….

They had samples galore! I loved the sushi and the goat milk fudge best! (I indulged despite my sugar-free pledge :-) ).

My daughters each got a large sugar cookie, which we regretted later in the night when they were wide awake at 10 pm! I even got to see some of my old co-workers, which was a pleasant surprise. It was such a fun way to spend time together (and get to try some yummy bites)!

As I mentioned Friday, this month is devoted to the love of my life. I really am a lucky girl when it comes to my marriage. There’s not a single husband/boyfriend that I know of that’s more doting than my husband. I am actually the one that finds it hard to express how I feel verbally!…which is another reason I wanted to feature him this month.

Today’s recipe is one that I recently whipped up in an attempt to put a new spin on one of my husband’s favorite treats….the classic peanut butter cup….

…aren’t they pretty? Some things photograph really well, and this recipe was one of them!

….that’s one of my favorites….the taste of these was such a delicious surprise!….and my husband was happy to have more protein than carbs in a scrumptious peanut butter cup package!

The peanut butter layers are a bit softer than the chocolate layer, which makes for a texturally balanced bite! I just loved the contrast of the crisp chocolate layer!

Ingredients
  • Peanut Butter Layer:
  • 4 T. creamy peanut butter, no sugar added
  • 1 T. coconut oil, melted
  • pinch sea salt
  • ½ t. vanilla
  • 1 t. maple syrup
  • Chocolate Layer:
  • 1 T. coconut oil, melted
  • 1 T. + 1 t. carob powder
  • ¼ t. vanilla
  • pinch sea salt
  • ½ t. maple syrup (or 5 drops stevia)
  • 3 drops stevia

Instructions
  1. Mix together the ingredients for each layer in two separate bowls.
  2. Using 3 paper muffin cups, fill the bottom with enough of the peanut butter mixture to cover it (2-3 teaspoons).
  3. Freeze the cups until the first layer is hard enough to hold its shape (5-10 minutes).
  4. Top with the chocolate layer (divide it among the 3 cups equally).
  5. Freeze until hardened (5-10 minutes).
  6. Finish with the remaining peanut butter mix (divide it among the 3 cups equally).
  7. Freeze until completely hardened (15-20 minutes).

Notes
This recipe is based on using maple syrup in the chocolate layer. Weight Watchers points (new system): 7

These are so elegant-looking…you could bring them to a fancy dinner party, and they’d fit right in!

    Great recipe! I’m very excited to make these! We just moved from Tucson (didn’t find your blog until after the move – bummer) – I wish I was there to check out the new Whole Foods store. I used to go to the central Tucson location a few times a month (it was a bit far to shop there regularly). Thanks so much for sharing!

      I just made these; they are amazing!!! I used a small heart shaped mold for chocolates as I didn’t have any muffin cups. They make adorable little PB & Chocolate hearts. Love them. Thank you!
