My kids (all three of them
) love chocolate and popsicles….
….so I’m always searching for a good recipe that combines the two. Most that I’ve found have had either too much sugar or some other ingredient that I’ve found disagreeable for our allergy issues…
…so, as with most things, I decided to make my own!
I can be so cheap when it comes to either paying for something or making it myself. I absolutely refuse to buy store-bought kale chips…instead I indulge in these crispy BBQ treats. I scoff at the dairy-free ice cream aisle…I came up with this creamy delight to quell that desire. I turn my nose up at the tortilla section. (I make these delicious babies instead.) Out of necessity is born creation…at least that’s the case with me…which brings us to today’s saliva-inducing dream!
Rich, chocolaty, perfectly sweet…these will knock your socks off, and they are super easy to make!!
- 1 ripe avocado
- ¼ c. cocoa powder
- ½ c. light coconut milk
- 3 T. honey or maple syrup
- 1 t. vanilla
- pinch salt
- ½ t. cinnamon
- 10-15 drops stevia
- Process all the ingredients until very smooth.
- Pour into popsicle molds and freeze until solid (4-6 hours). (I got 3 pudding pops, but it will depend on how big your molds are.)
Dairy-free, with the good fat from avocado and coconut, these are a healthy treat that taste sinfully good!!

Pudding pops are right up there on my list, along with creamsicles and drumsticks (the chocolate and peanut covered ice cream in a cone).

I am interested in how this is paleo? Cavemen did not have spices or salt or cocoa or vanilla…..
To my understanding, the Paleo diet is based more on theory than fact. There are different variations of what is acceptable and what is not.
