Lately, I’ve been trying out various pancake recipes. This one I enjoyed recently was made with leftover cooked oatmeal and white sweet potatoes… ….they were delicious! I always seem to have leftover cooked oatmeal, so these pancakes have been the perfect way to use it up!
A bit later, I worked on a fat-free, sugar-free brownie recipe that I more than sampled along the way….
…my husband thought the taste was reminiscent of Ding Dongs, but they still need some work!
For lunch, I enjoyed my Spicy Sunbutter Noodles (I’m a bit obsessed)…
….this batch was filled with zucchini noodles, a cucumber, lots of cilantro (love that stuff!), and raw pumpkin seeds.
More pumpkin seeds…
….once I start eating these, it’s hard for me to stop! Sometimes I toast them, but they’re delicious raw too. 🙂
I’ve been playing around with my own version of cauliflower pizza crust….
I’ve been trying to get a crisp crust using NO cheese and make it big enough to serve just one…I’ll be posting this one soon!
For dessert, I had a few of my Fat-Free Oatmeal Raisin Cookies…
…these totally satisfy my never-ending cookie craving! 😀
