Some mornings, when I’m feeling lazy, I mix yogurt, hemp milk, frozen blueberries, frozen raspberries, raw honey, and a bit of stevia in a cup to create a kind of slushy-smoothie. It’s actually really good (and I don’t have to clean the blender). 🙂
A bit later I snacked on a couple of organic, local peaches….
….and a recipe in the works…
I don’t have an exact name yet, but something along the lines of Raisinet Truffles…
For lunch, I marinated and grilled a couple of big Portobello mushrooms. In my mind, this was a double decker mushroom burger, so I added lettuce, cherry tomatoes, red onion, and yogurt cheese. So good!
I sipped some of my Almost Sugar-Free Lemonade throughout the hot afternoon…
Dinner was another veggie-packed meal…
…creamy broccoli soup…or should I call it, No-Cream of Broccoli Soup? 😀
For dessert, I sautéed some sliced Pink Lady apples in coconut oil and added a bit of coconut sugar, pie spice, and salt. I then whirred some pecans in my coffee grinder and sprinkled them on top. It was a great end to the day.
