It has been TOUGH not having bananas for my morning smoothies!
The only thing saving me are avocados and frozen pears. This smoothie has both of those along with hemp milk, honey, chia seeds, lime juice, vanilla, stevia, and a whole zucchini. It may not sound the best, but the lime and pear combo is really tasty!
I cannot get enough potatoes lately! I love to cube them, toss them with coconut oil, salt, and pepper, and roast them. This one was topped with nutritional yeast, which made it especially delicious.
I’ve been sporadically working on a few different salad dressings…
….this one is Asian-inspired, with flavor of sesame, orange, and ginger. I poured it atop a salad of greens, alfalfa sprouts, red cabbage, red onion, pumpkin seeds, dried cranberries, and feta cheese.
Along with my potato obsession, I’ve also been craving nutritional yeast, so I made myself a batch of ‘cheesy’ kale chips later in the day. These were the best kale chips I’ve ever made, and I probably gobbled up the entire pan in under five minutes.
For dinner, I didn’t feel especially hungry, so I roasted a pan of broccoli to eat…
…I added in some garlic and (once it was roasted) tossed it all with some lemon juice, lemon zest, and parmesan. They were perfectly crispy on the outside without being burnt…my favorite!
For dessert, I munched on a few dark chocolate honey mints…yet another recipe in the works (there’s always something!). I love the combination of chocolate and mint, and it’s such a refreshing way to end the day!
