I’m becoming fairly proficient at finding other fruits to replace bananas in my morning smoothies. This one had mango, raspberries, kale, honey, orange juice, and hemp milk. The color is not pretty, but it was delicious!
A bit later, I had a plate full of scrambled eggs. I sautéed them with onions and mushrooms and topped them with some grass-fed cheddar I bought recently from Trader Joe’s.
Lunch was my usual salad, which contained greens, alfalfa sprouts, grated carrot, chopped cauliflower, raisins, and pumpkin seeds. I took the picture before I dressed it, but I used an Asian dressing I’ve been working on. I hope to share it soon along with the Date Dijon recipe I was previously using. 🙂 I have a tendency to get sidetracked with recipes…
Oh, how I’m LOVING potatoes lately! I roasted this one after tossing it with coconut oil, Dijon, salt, pepper, and nutritional yeast. This is better than a dessert for me right now!
After seeing this recipe on Amber’s blog, I knew I had to try my own version of it!
I made my own marinara sauce and added ground beef and minced mushrooms to the mix. I served it over zucchini noodles and topped it with more grass-fed cheddar. My whole family loved it!
I forgot to snap a picture of my dessert, but I partook of some Raw Mint Chocolate ‘Bon-Bons’ that I’m working on. I’m hoping to share the recipe Monday!
