Light breakfasts like smoothies and fruit have been on the menu this week, as I’ve been less hungry in the morning…
…this is my Berry Good Smoothie recipe with an apple thrown in for extra sweetness.
A bit later, I made myself some scrambled eggs with shallot, mushrooms, shredded kale, and some pepperjack cheese…
…cheese doesn’t always agree with me, but I absolutely love it mixed in with eggs!
As usual, I had a big salad for lunch. Mixed greens with cucumber, radishes, sprouts, raisins, walnuts, and sunflower seeds. I made a refreshing lemon and olive oil dressing for the top, and it really boosted my energy for the rest of the day!
My lunch kept me pretty full until around 5pm when I made myself a quinoa and vegetable stir-fry…
This has been one of my favorite dinners lately. I add in carrots, celery, green cabbage, and water chestnuts which give it a nice crunch!
I’m in the midst of making recipes for Halloween and October, one of which just happens to be healthy Snickers bars. For my most recent batch, I had a bit of the caramel layer leftover, so I made truffles out of it…
These were so good, I may have eaten all the scraps, haha….no, but seriously.
