I’ve been craving peanut butter toast in the morning…
…in order to cut the fat and up the protein, I’ve been making a dessert hummus spread by blending cannellini beans, peanut butter, cinnamon, and honey. It’s delicious on sprouted wheat toast, in smoothies, or even by itself.
I recently made a batch of sweet and spicy pumpkin seeds that I’ve been snacking on. With touches of maple syrup, soy sauce, and cayenne, these hit the spot!
I made a huge batch of my broccoli pesto, so I’ve been enjoying sandwiches with it at lunchtime…
….I also piled on some unseen alfalfa sprouts. The coconut flatbread is so quick and easy, and it tastes delicious with the pesto.
I’m so happy that apples are plentiful (and cheaper) than they were during the summer! I’ve been eating up to three every day. My favorites are ones that are firm and crisp, such as Pink Lady.
I often eat vegan when my husband isn’t home, but this particular night he was, so I made one of his favorites…
…I layer chicken, sauteed vegetables, and long-grain brown rice in a large baking dish and then I top it with yogurt cheese. This was a welcome and hearty dinner after a good afternoon workout. I only ate a small amount of the chicken, as meat has been less and less appealing to me lately.
It seems like there’s a new dessert in the works each week…
