My daughters and I have been drinking these ‘chocolate’ smoothies each morning…
…I actually use carob instead of chocolate, and I pair that with avocado, peanut butter, honey, rice milk, a pinch of sea salt, vanilla, stevia, and ice. The avocado makes it nice and creamy, and the carob gives it a chocolat-y taste without the caffeine.
I’ve been testing out an egg-free pumpkin pie recipe, so, naturally, I had to sample the product.
If I post this, it will be on Monday, but I truly haven’t decided what to do yet. The taste is really good, and by using part stevia, the sugar is lower than some other recipes, but the texture is a bit softer than I had anticipated.
I was pretty filled up with pie by the time lunch rolled around, so I ate a big salad a bit later than usual…
…made with a combination of green and iceberg lettuces, red onion, cucumber, grated carrot, pumpkin seeds, and (my newest obsession) chopped prunes. I topped it with a simple lemon Dijon dressing.
My pie overdose kind of messed up my eating for the day, so the next meal I ate was dinner…
…I made a vegetable stir-fry of scallions, ginger, garlic, carrots, celery, water chestnuts, snow peas, mushrooms, and Napa cabbage. I sprinkled on some soy sauce and rice vinegar to give it more of a ‘take-out’ taste. It was delicious, and left me feeling satiated, but not lethargic.
For dessert, I was craving my Cinnamon Raisin Ezekiel bread…
…if you’ve never tried this, you really should! It’s a sprouted grain bread with no added sugar, but, to me, it tastes like a dessert! Slathered in a coat of peanut butter, this made a great end to the night.
