Lately, my breakfasts have become a bit boring.
I rotate between two fried eggs with a piece of sprouted wheat toast and strawberry jelly (I love the eggs with the sweet fruit spread), overnight oats, or a smoothie of some sort.
All are delicious in their own right, but recently, I haven’t been looking forward to any of them.
I typically like my breakfasts to be fast, easy, and low in sugar (I’d rather have an after-dinner dessert than use up my ‘sugar points’ for the day on breakfast), and this pudding deliciously hits all three marks.
I’ve always been a fan of chocolate avocado pudding as well as the combination of chocolate and berries, so I thought, why not all of those ingredients together? I use a modest amount of cocoa powder just to give it a slight chocolate taste, while the addition of coconut milk and shreds adds sweetness and flavor.
It’s makes one of the most elegant, yet appetizing, breakfasts I’ve had to date.
- 1 avocado
- 1 c. frozen blueberries
- 1 T. cocoa powder
- 2 T. coconut milk (or another dairy-free milk)
- 2 T. maple syrup (you can also use ⅛ t. powdered stevia extract or a combination of the two)
- pinch sea salt
- ½ t. vanilla
- 1 t. unsweetened coconut, for topping
- Process all of the ingredients until smooth.
- Top with the coconut shreds and enjoy!
My daughters and I typically share this, as it is quite rich. They enjoy it immensely, and we all have a focused energy afterwards that I imagine is due in large part to the good fats from both the avocado and coconut.
I ate this yesterday and literally proceeded to clean my house like a 50’s housewife on meth. 😀
