Pancakes have been on the menu…
…I’m feeling a bit sensitive to eggs, so I’ve been eating them sparingly the last few weeks. In lieu of them, I’ve been eating smoothies, fresh-pressed juices, and these grain-free pancakes. I like this recipe a lot, as it’s easy, sugar-free, allergy-friendly, high in protein, and delicious!
I’m trying out some different cracker recipes….
…these sweet potato crackers still need some tweaking, but my girls just loved the taste! Sorry for the unflattering dishware…everything seems to end up in a princess bowl around here.
A huge salad was on the menu for lunch. This was made with lettuce greens, red cabbage, red onion, baby cucumbers, chopped celery, chopped red bell pepper, and pumpkin seeds. This one was very enjoyable because I topped it with an orange sesame dressing I’ve been working on and dried figs. Nothing better!
Two words: eggplant chips.
I will level with you, these were not good. I had high hopes, but maybe I just don’t like eggplant like this? It was an interesting experiment, but I will not be posting these unless I come up with some delicious alteration.
Since my snack bombed, I was more than ready for a hearty dinner…
…soft, fluffy brown rice topped with sautéed vegetables, organic chicken pieces, and (unseen) melted yogurt cheese over the top. This is my favorite casserole! One of these days I’ll have to post it.
Homemade Snickers’ cups! Because I can have peanut butter, I made these as written using peanut butter in place of the Sunbutter and traded the sunflower seeds for a few toasted walnuts. Yum yum!
