I’ve been horribly sick the last few days, so I’ve been trying to drown all traces of viruses and bacteria with raw garlic and fresh juices…
This one contained two carrots, two celery stalks, one cucumber, half of a beet, a knob of ginger, half of a lemon, two green apples, and a few kale leaves all poured over a pitcher full of ice (my favorite way to drink it).
I recently purchased this Breville juicer and am loving it!
A unpictured slice of Cinnamon Raisin Ezekiel Bread topped with coconut oil and a sprinkling of sea salt was my snack this day. Sorry for the obvious scatter-brained day!
Trying to pack in more nutrition, I had a large salad for lunch…
This one was filled with green leaf lettuce, red cabbage, red bell pepper, red onion, cucumbers, pistachios, and raisins all topped with a creamy Italian dressing. Ironically, I wasn’t craving this AT ALL, but it helped me feel a bit better.
I’ve been wanting to cut back a bit on the dried fruit (dates in particular) because I’ve been eating so much of them in my raw desserts, so I created a ‘test’ truffle…
These were filled with oats, brazil nuts, raw carob, avocado, and coconut butter. I might add a bit of stevia next time since it pairs so well with carob, but all these flavors together were really delicious, and it makes for a nice truly sugar-free treat.
I recently tried Mike’s Soy and Ginger Chicken recipe and loved it!
I beefed mine up with a few more veggies, including mushrooms, red bell pepper, and green cabbage. Served over brown Jasmine rice this made for a delicious dinner and equally delicious leftovers! I think I’ve made it three times so far, and my daughters and husband all love it too!
I made a quick stop by a local health food store for some slippery elm lozenges and left with a few organic oranges as well…
The ones I bought were a bit smaller than this one (this is actually an old picture), and it made a nice, vitamin C-packed end to the day.
