Smoothie bowl city over here…
I can’t seem to get enough of these! I actually look forward to them each day and have been eating them for lunch or dinner occasionally as well. This one contains hemp milk, avocado, homemade walnut butter, cacao powder, dates, raw honey, kale, and is obviously topped with cacao nibs and goji berries.
I didn’t know what to make of goji berries when I first bought them (I really bought them just to see what all the fuss was about). They are a bit off-putting in smell, but I’ve really grown to love them!
In the midst of shopping and taking my daughter to school, I wasn’t home for my mid-morning snack, but we all partook of Quinoa Pizza Crust this afternoon…
I topped it with my Homemade Pizza Sauce and a combination of mozzarella and cheddar cheeses. Such a delicious meal, and my daughters both love it too!
I made a pre-workout smoothie of one apple, one pear, one cup of frozen pineapple, one banana, and one large handful of kale. This picture is an older one, as I forgot to photograph the one I actually drank, but they look very similar.
Dinner was a house favorite….
Mushroom and broccoli stir-fry with a delicious apple juice/soy sauce/honey glaze. I usually put beef slices in here, but I pulled most of mine out, as I wasn’t in the mood for meat this night. After compensating with mushrooms, I started thinking this would be a great vegan recipe because the sauce is so good. It reminds me of Chinese food!
Most of my desserts have some type of fat in them, so this night, I tried my hand at some fat-free (or rather, no oil added) chocolate muffins…
I was really happy with how these turned out! I used a combination of applesauce and oat flour, among other ingredients, and they came out really ‘fudgy’. I’m hoping my husband likes and approves them, as I’d like to post the recipe for them soon.
