I was in the mood for something light this morning…
In lieu of my usual smoothie, I juiced carrots, celery, cucumbers, beets, lemon, and ginger together to give both my liver and my energy level a boost!
A bit later in the morning, I made myself a sweeter shake…
I blended a small banana with some raw walnut butter, dates, cinnamon, hemp milk, Brussels sprouts, and ice. I couldn’t taste the Brussels at all, and the other flavors were so delicious together! I really tasted like a milkshake.
For lunch, I made use of many of the leftover vegetables in our fridge…
While I roasted some sweet potatoes, I set to sauteing a bit of shallot with some crimini mushrooms, cherry tomatoes, and chopped kale. I added in some apple cider vinegar near the end of cooking, which really brought out all of the salad’s flavors!
This one shaped up to be a bit more like sorbet, in that it was so thick! It contained frozen mango, frozen berries, some raw honey, and a few splashes of freshly squeezed orange juice. I was craving liquid food this day, I guess.
Yum, I’m still thinking about this meal! I mixed quinoa with sautéed onions, garlic, and more kale, and then topped it with some lemon juice and some lemon pumpkin seeds. I’d like to turn this into a post, since it was so good!
I ended the night with a couple of raw freezer brownies, which kept me alert and energetic enough to write this post. 😀
