Thick strawberry chocolate smoothies are on the morning menu!
This one was filled with hemp milk, raw honey, an avocado, some dates, cocoa powder, stevia, and frozen strawberries. This would be great for Valentine’s Day, especially with the goji berries and cacao nibs on top.
I was in the mood for something savory later this morning…
I roasted some butternut squash with grapeseed oil, herbs de Provence, sea salt, and smoked paprika for a mid-day snack. Is anyone else ready for fall?
For lunch, I had a large salad with iceberg and green leaf lettuces, red bell pepper, grated carrot, cucumber, pumpkin seeds, raisins, and chopped chicken. I topped it with a delicious apple cider/balsamic vinaigrette that I just kind of made up on the fly.
This was really more apart of my lunch than my snack, but there was a little bit of time in between the two.
I made a batch of my Lentil Soup for me and the girls to eat. I love how filling and hearty lentils are!
I made a delicious stir-fry for dinner. Filled with tons of vegetables, like snow peas, broccoli, mushrooms, and carrots, this is such a nutritious meal. I like to use short grain brown rice and add a bit of chicken for protein. After snapping this shot, I topped it with some toasted sesame seeds for extra flavor and a bit of crunch.
Have I told you how much I love these Chickpea Flour Chocolate Chip Cookies??
