I’ve bought a slurry of avocados over the past two weeks, so I’ve been eating one almost every day!…one of my favorite ways to use them as breakfast food is in my Blueberry Breakfast Pudding…
…deemed ‘energizing’ for a reason, this gives me some serious power for all things gym or cleaning in the AM hours (and I feel like I’m eating a treat!).
Though bananas don’t agree with me very well, I often get a craving so strong, I have to indulge! This day, after slicing and freezing a whole banana, I began playing around with a few different hard shell coatings for them, including using ingredients like tahini, Sunbutter, and carob.
I just relied on stevia to sweeten the coating, as banana obviously has a sweetness all its own. Yum, yum!
I was rather hungry this day, so I made myself a large salad for lunch…
…packed full of lettuce greens, red bell pepper, cucumbers, red cabbage, grated carrot, dried cranberries, raw pumpkin seeds, and diced chicken. I topped it all with a tangy vinaigrette made simply from olive oil, apple cider vinegar, Dijon mustard, salt, pepper, and oregano.
Throughout the afternoon, I snacked on grapefruit, as well as cucumbers in a ‘sauce’ of plain yogurt and apple cider vinegar. I just love the tanginess of the cucumber mix!
Dinner turned out amazing, if I do say so myself, and it was so quick to make!
I had some random food in the fridge in desperate need of being used, so I made a batch of forbidden rice and prepared a ‘zesty’ chicken accompaniment.
Onions, green bell pepper, garlic, tomatoes, spices, diced chicken, lime juice, and cilantro all came together to make a great meal that everyone enjoyed! I’m hoping to share this one soon!
For dessert, I enjoyed a good-sized piece of Homemade Chocolate. I actually like my recipe better than the store-bought kind anymore. 🙂
