I enjoyed the best smoothie this morning!
My smoothies had been a bit ‘off’ lately, as I had been experimenting and adding too much liquid, but this one came out close to perfect.
Rich and thick, this chocolate cherry smoothie really hit the spot. I love it with dashes of both cinnamon and vanilla, as I feel both flavors really complement the cherries.
I couldn’t resist my huge stash of Pumpkin Seed Flour Cookie Dough Bites in the freezer later in the morning…
These are low in both sugar and carbs, and I find they’re a great pick-me-up for mid-morning or mid-afternoon slumps.
I made a huge salad for lunch filled with dark greens, green leaf lettuce, grated carrot, red onion, red cabbage, cucumbers, raw pumpkin seeds, dried cranberries, and chopped chicken breast. I topped it with my favorite homemade dressing at the moment, a zucchini-based creamy Italian one that I’m enjoying so much!
My Life-Changing Green Drink is still an afternoon staple, as are Pink Lady apples…

This night, I made what has become a staple around here: red lentil dal with spelt naan.
If you’re unfamiliar, dal is basically a curry-ish lentil dish and naan is a yeast-free flatbread used for dipping.
This is my husband’s absolute favorite vegan meal, which is saying a lot considering he’s an avid meat-eater.
The dal is flavorful without being overly spicy, and the soft, whole grain naan is the perfect accompaniment.

These have a soft texture combined with slightly crisp edges that we’ve all really been enjoying, especially my girls. The best part is that they only have two tablespoons of sweetener in the entire dozen, equaling out to only 1/2 teaspoon of sweetener per cookie. 🙂
