This week, I’ve been craving carbs like a madwoman…
This morning, I made a loaf of yeast-free bread made from spelt, oat bran, and oats, which was very filling and very delicious!
I topped it with a good drizzle of olive oil. I also had my Creamy Apple Pear Smoothie alongside it…
I had a huge salad for lunch this day…
Dark greens, green leaf lettuce, grated carrot, red cabbage, cucumbers, raw pumpkin seeds, raisins, and a good portion of chopped chicken breast all topped with my Zu-Creamy Italian Dressing.
I recently pulled a muscle in my calf from running so I’ve been upping my protein a bit to try to help repair it, hence the rather large portion of chicken.
I snacked on a couple of unpictured apples, which has been pretty much a daily occurrence. I love apples!
For dinner, I tried out a new recipe…
I made a sauce from green peas and poured it over spaghetti squash noodles. I topped it with more chopped chicken, a good amount of grated raw milk cheddar cheese, and lots of black pepper. This was delicious! I really enjoyed the sauce, and it was quick, easy, and cheap to make.
For some reason I’ve been craving molasses lately, so for my dessert, I tried making some raw gingerbread bites…
These were pretty good for an on-the-fly treat, and I enjoyed my addition of whole buckwheat groats. It gave them a nice little crunch!
