Believe it or not, I’ve never attempted the phenomenon that is avocado toast. This week, however, I decided to give it a go!
While I didn’t dislike the combination, it’s not totally my thing either. Maybe I shouldn’t have topped it how I did with the tomatoes and egg, but I have a pretty good imagination and don’t think I would have raved about it sans additions. Glad I tried it though!

Topped with a few goji berries, this made for a tasty treat, and I’ve made the recipe a couple of times so far because I like it so well.
For lunch, I made a batch of my Balsamic Rosemary Roasted Vegetables, sans zucchini.
I love this recipe, especially when paired with rice! I used a combination of brown basmati and black forbidden rices.

I have an abundance of apples right now, so I’ve been gleefully snacking on them throughout a day!
For dinner, I tried a new recipe out on the family…
I paired brown rice, green peas, kale, and chicken with a dairy-free cream sauce, and topped it with some cheese and parsley. My husband just raved about this! He said it was the best meal I had made in a long time, which tickled me pink. 🙂
