These are an easy, healthy, delicious, and oh-so-cute option to throw together the day before the big day. Just stash them in the freezer, but try NOT to eat all of them beforehand.
I’ve always thought (if ever I had a Super Bowl party) that a tostada bar would be fun! Bake up some corn tortillas until they’re crispy and set up a buffet line, if you will. Lettuce, chicken, tomatoes, beans, rice, cheese, salsa, guacamole, etc. A bit more work, but yum yum!
Speaking of guacamole, this little gem of a recipe significantly cuts the fat and calories of the original dip by adding in a sneaky green veggie.
Probably too much work for a large crowd, but this is something I would make if it were just me and a buddy (aka, my hubby). Cheesy, gooey goodness without the guilt!
