For breakfast, I tried a new cereal, based around buckwheat…
I’ve tried soaked and pureed buckwheat cereal in the past, but have found the texture a bit ‘off’. This recipe was really no different.
I pureed the buckwheat with some coconut milk, applesauce, and cinnamon, and topped it with raisins, pumpkin seeds, and hemp seeds.
It was edible, but I doubt I’ll make it again.
For lunch, I had a large salad filled with various lettuces, red cabbage, grated carrot, cucumber, red bell pepper, raw pumpkin seeds, and raisins, all topped with a creamy homemade herb dressing.
For snack, I made my Ice Berry Milk, which is still a weekly (almost daily) favorite…
I can’t eat this in front of my girls without them asking for a cup as well!
For dinner, I made burrito bowls for us girls…
For dessert, I ‘indulged’ in a sugar-free brownie…
The flavor for these is spot-on, but it still needs a tweak here and there to make it less crumbly. These are truly free of sugar, sweeteners, and fruit, so hopefully any of you who are diabetic or on a candida diet will enjoy the upcoming recipe.
