Just to recap, this post is just to write about my most memorable meals lately, be it from my own blog, mind, or another’s site.
1. Spaghetti Squash Pie
I eat spaghetti squash at least once a week, so I’m always trying to find ways to ‘reinvent’ it, so to speak.
This night, I had an idea to make it into a quiche-like pie, which turned out even better than I imagined. I mixed the cooked spaghetti squash with a load of sauteed veggies and egg whites and topped it a bit of cheese. After baking in the oven for a short period, this scooped out like a regular quiche, minus the crust, and I just loved it! I had to stop myself from eating the entire thing that night.
2. Apple Pie Coco-Roons
I’m sure you’ve heard of Coco-Roons?…if not, they’re basically a soft, dough-ish cookie made primarily from coconut and almond flour.
Since I’m allergic to almonds, I set out to recreate the apple pie flavor with a couple of allergy-friendly substitutions, and I really enjoyed the final product!
3. Roasted Green Beans
I had a bag of green beans going bad one night, so I decided to roast them into fries.
I just tossed them with some olive oil, salt, and pepper and roasted them at 400 degrees for about 20-30 minutes.
Once they came out, I sprinkled them with some lemon juice and parmesan. I’d definitely make them like this again!
I’ve had a bag of teff flour in my pantry for, oh I don’t know, a year or more?
I’ve also wanted to make injera, an Ethiopian flatbread, for quite some time, so this last week I finally got around to it.
I used this recipe from Yum Universe, which turned out awesome!
A couple of things I did differently from the recipe: 1) my dough sat for a good 36 hours, and it was still good; 2) I cooked both sides, similar to how I cook a tortilla.
Another thing is that I might add a touch more salt to the recipe next time, but all in all, this is a recipe you all should try, especially if you’re gluten-free!
5. Bitter Chocolate Cake for One
If you follow me on Instagram, you might be getting tired of seeing my bitter chocolate cake with peanut butter frosting. I’m OBSESSED with it!
The cake has zero added sugar or sweetener, and there’s just a touch of maple syrup in the ‘frosting’.
