This post highlights some of my best meals from the past week or so!
1. Hummus Cheese Crisps
Maybe I’m behind in this regard, but the combination was so delicious! In my mind hummus and cheese don’t seem compatible, but how very wrong I was!
2. Peanut Butter Quinoa Balls
I had some random ingredients in the fridge, cold quinoa being one of them, so I decided to attempt an energy ball based around the pseudo-grain…
I mixed the quinoa with a smattering of other things, including peanut butter, oats, coconut, molasses, cinnamon, and vanilla.
These were also delicious (I obviously wouldn’t post them here if they weren’t). I was surprised that cooked quinoa would make such a good base for something like this, but it did, AND these actually gave me a hit of energy!
3. Creamy Herb Dressing
I eat a lot of salad, so I’m always tinkering with dressing recipes to liven them up. This one was a yummy mix of olive oil, apple cider vinegar, raw zucchini, and various herbs, including paprika, oregano, and thyme. I kicked up the spice a bit with a dash of cayenne too and really enjoyed it!
4. Creamy Scalloped Potatoes
The holidays are quickly approaching again, so I’ve been trying my hand at a few of my family’s favorites, including scalloped potatoes.
The traditional recipe has butter, milk or cream, and cheese, but with this version, I’ve lightened it up a bit using a particular veggie to make a ‘cream’ based sauce (NOT cauliflower, thankyouverymuch).
I’ll definitely be posting this as the winter months get closer!
5. Healthy Treat
I thought this little concoction was noteworthy: take my Ice Berry Milk recipe, mix one teaspoon coconut oil, one teaspoon cocoa powder, and 1/2 teaspoon maple syrup, top the iced berries with the chocolate ‘syrup’ and allow to freeze into a shell. Dig in! Yum yum!
