Another week, another round-up of my best eats lately!
1. Cauliflower and Green Pea Stir-Fry
While I love curries, I don’t always love the recipes that call for coconut milk. I drink so much of the stuff already that I think I just like a break from it every now and then.
Because of this, I’ve been trying to create a stir-fry of sorts with curry, cumin, and a few other spices as a ‘coconut milk-free’ alternative.
This recipe turned out very well, and with a few tweaks could be a real knockout!
2. Chocolate Yogurt Peanut Butter Pops
There’s not much to say that you don’t already know here…chocolate, yogurt, peanut butter, and a little bit o’ honey make for a great ‘fudge’ pop!
I don’t tolerate yogurt very well, so I can’t guarantee I’d share this recipe before it warms back up, but the combo is really delicious.
Have you all heard of this? Zoats are the cute moniker used by many to describe the combination of cooked oats and zucchini shreds. In addition to the added nutrition from the zucchini, the veggie adds volume to the cereal, giving you more ‘bang for your buck’, so to speak.
I didn’t taste the zucchini at all and added in raisins, and plenty of vanilla and cinnamon for flavor, leaving the sweetener out completely. I topped the bowl with a good dose of frozen blueberries and my Homemade Coconut Milk.
4. Buckwheat Brownie
I’m a little obsessed with this recipe right now…
It really makes the perfect treat, and even though I just posted about it in my last WFH, I wanted to mention it here again and tell you that if you want a single serve portion like I so often do, just divide each ingredient in the recipe by three.
5. Detox Hot Pink Smoothie
I’ve been pretty sick this last week, so today I tried a new smoothie to sort of ‘restart my engine’.
It actually turned out delicious, considering it had my least favorite food: beets.
I blended the beets with a few other ingredients including celery, lemon juice, apple, and strawberries. I may post this as it seemed to help me, and the color is so pretty.
