Well, hellooooooo November, where did you come from?!
Once October hits, it seems like each holiday is here and gone before I have a chance to really enjoy it!
We did end up having a fun Halloween this year with all of us getting a bit jazzed up in something...

With Halloween done and gone, I am now looking forward to Thanksgiving and Christmas, so my culinary mind has been circling around the associated flavors, not the least of which is peppermint!
Growing up, candy canes were an integral part of Christmas in my home, so the scent alone instigates a Pavlov's dog response in me for all things holiday, including the scent of pine trees, multi-colored decorations, and Andy Williams' crooning.
As a little girl, I used to put on a solo Christmas act every year for my folks, complete with tinsel-covered me dancing and jingle-belling across the mini stage in our family room. What sports my parents were! Sometimes I would even charge them admission and set up a little concession stand, complete with popcorn and fruit juice for everyone's enjoyment.
What I should have had at those sprightly shows is this peppermint bark! Cooling, refreshing, with a touch of sweetness, this addictive and creamy treat would have sold out!
I've been immensely enjoying this recipe lately, as it is a great after-dinner sweet bite, and, on top of that, it's so quick and easy to make!
4-Ingredient Peppermint Ice Bark (Grain-Free, Nut-Free)
Ingredients
- ½ c. coconut butter
- ¼ c. coconut oil
- 1 t. peppermint extract
- 2 t. raw honey or maple syrup
- TOPPINGS:
- goji berries
- cacao nibs
- crushed candy canes
- shaved chocolate as desired
Instructions
- Heat the coconut butter and coconut oil on low until both are melted.
- Remove from heat and stir in the peppermint and honey.
- Line an 8 x 8 baking dish (or other similar-sized dish) with wax paper.
- Pour the mixture onto the paper and allow it to spread out.
- Sprinkle on toppings, as desired.
- Freeze until hard.
- Break apart and enjoy!
- Store in freezer for best keeping.

My daughters both love this 'dessert' and have been asking for it every night, which is a good sign, I think! I predict I'll be making more for many weeks to come.

Yes, I keep it in the freezer, sorry I should have wrote that! In the pictures, I have goji berries, cacao nibs, and shaved chocolate as toppings. 🙂
