I love raspberries, so I recently created a smoothie around them…a chocolate raspberry smoothie, to be precise.
This was really yummy, and I’ll probably give it a post soon! It contains avocado, raspberries, cocoa powder, Homemade Coconut Milk, and raw honey.
This day, I was testing out some cornbread (no corn!) muffins for the bloggy, so, naturally, I sampled one!
This particular batch stuck to the pan, so I didn’t get pictures, but I’m hoping to soon! These would make a nice addition to a chili dinner, I think.
I had a large, lovely salad this day for lunch.
Filled with lots of veggies, including lettuce, grated carrot, yellow bell pepper, red cabbage, cucumbers, and scallions. I topped with a handful of toasted pumpkin seeds and some chopped chicken breast.
For the dressing, I made a big batch of my Creamy Cilantro Dressing and added about 1/2 teaspoon of turmeric to it, which made it very tasty!
Craving chocolate, I tried out a new oat flour cookie recipe this afternoon.
These were DELICIOUS! I couldn’t believe how well they turned out, and there was only 1 1/2 tablespoons of coconut sugar added to the batter (for 24 cookies).
The oat flour gives a natural sweetness, and the addition of chocolate chips really makes up for any lack of sweetness.
I also added in good amounts of vanilla and cinnamon, which help immensely with flavor.
For dinner, I roasted a whole chicken and served it with my Brussels Sprouts Gratin (recipe to come Friday!), and a saffron parsley rice pilaf.
I had two heaping plates of everything, it was so good!
I ended the night with a cup of tea made with a bag of peppermint and a pinch of Mother’s Milk, as I’m still breastfeeding Sammy.
