I have to say, I’ve missed WIAW a bit! In light of that, I thought I’d bring it back every now and then when the mood strikes me. 🙂
The girls and I enjoyed my Vanilla Avocado Milkshake this morning…
We like to top it with a big handful of oat and buckwheat granola, a recipe I haven’t yet posted. It makes for a great way to start a day, and the girls get their good brain fat before heading off to school!
Lunches for me are still fairly predictable. I either enjoy soup with a cheese crisp or a large salad…
This day, it was the latter. Spinach, lettuce, red bell pepper, red cabbage, grated carrot, cucumber, raw pumpkin seeds, and chopped chicken, all topped with my Creamy Cilantro Dressing.
Right around 1-2pm each day, I like to have a snack, many times in the form of this Bitter Chocolate Cake…
Definitely NOT as pretty as the post pictures, but still just as delicious! This day, I replaced the orange juice with my Homemade Coconut Milk, as I was out of the former.
That peanut butter ‘frosting’ really makes it!
Dinner this night was a creamy black bean soup recipe I was testing out…
Everyone raved about this and said it was definitely blog-worthy. I made an assortment of toppings to go along with it, including guacamole, Greek yogurt (for sour cream), cheese, and scallions.
I also had some fresh red bell pepper on the side.
I ended the night with a cup of peppermint tea.
