Welcome to one of my favorite posts!
Where the atmosphere is laid back, and I can just blab about what I've been gnawing on in the privacy of my own home.
As always, portion sizes are not given, just the details of the meal itself. Hopefully, these posts inspire your meals in some way!
Breakfast
This is an older picture, as I forgot to snap one this week, but this is the chocolate berry smoothie I've been enjoying for the last couple of years.
This delicious shake is made with Homemade Coconut Milk, avocado, cocoa powder, frozen raspberries, honey, and stevia.
I like to top it with a sprinkle of goji berries and cacao nibs for a little texture and then eat it with a spoon!
Lunch
The above usually tides me over until lunch. On this day, I had a large salad filled with tons of veggies..,
Sorry for the poor lighting, I'm still getting used to a new kitchen!
This is filled with lettuce, spinach, red cabbage, bell pepper, grated carrot, and scallions. I like to top it with some chopped chicken breast and roasted chipotle pumpkin seeds. I use my Creamy Cilantro Dressing on this, to which I've recently started adding a good spoonful of turmeric to.
Snack
I usually head to the gym in the afternoon around 4pm, so I often have a carb-heavy treat or snack of some kind. Today, it was my Single Serve Chocolate Chip Cookie...
I topped this with a simple yogurt drizzle and a sprinkle of cinnamon.
Dinner
The first night we moved into our new home, I made this meal. The inspiration was literally 'what do I have in the fridge that doesn't stink?'. Turns out, it was a hit, and I've been making it ever since.
It has ground beef, cooked quinoa, onion, garlic, chopped kale, and cherry tomatoes. It also has plenty of a seasoning salt I received as a gift one year from my in-laws.
I recently added beef back into my diet, as I was craving it. If I keep the amount to about a handful, it doesn't seem to give me the digestive trouble it once did!
Late night
No picture, but I typically end the night with hot tea, which helps me sleep. I like a combination of peppermint, red raspberry leaf, and rosemary. Not the tastiest, but I feel like the combo helps my hormones and mood immensely, particularly the rosemary.
