These cherry chocolate chip muffins are so delicious, and they're loaded with natural protein from both Greek yogurt and egg. No refined sugar either, as they're sweetened with maple syrup!

I love these muffins. Like, making them 2-3 times a week, love them.
They're perfect for summer, especially with cherries now in season!
Any treat or dessert that I can cram protein into is a win, since I tend to have erratic blood sugar. The protein from the Greek yogurt helps balance out the sugar, leaving me far more balanced than I would be without it.
The addition of a whole grain flour and a little fat make these a well-rounded muffin that I feel healthy and happy about eating!
Ingredients and substitutions

I'll list all the substitutions I've tried below. If it's not listed, I haven't tried it.
- Greek yogurt
- Egg
- Melted butter - I've also used olive oil and grapeseed oil with excellent results! Olive oil can leave a taste, depending on the variety you use.
- Maple syrup
- Vanilla extract
- Whole grain flour - I've used barley flour (my favorite!), spelt flour, and whole wheat flour all with great success.
- Baking powder
- Baking soda
- Sea salt
- Frozen or fresh cherries - Rinse and drain if using frozen cherries, then chop them up a bit; de-pit fresh cherries before chopping.
- Chocolate chips or chopped chocolate (cheaper than the chips, which matters right now, as chocolate has gone up in price)
Recipe steps
Preheat the oven to 350 degrees F. This recipe is great, in that it all mixes together in one bowl.
In a large bowl, whisk together the yogurt, egg, butter, maple syrup, and vanilla until smooth.
Over the top, sprinkle on the flour, baking powder, baking soda, and salt.


Gently stir the batter a few times, then add in the chopped cherries and chocolate.
Divide the batter among eight paper muffin cups and bake 12-14 minutes.


Recipe tips
The best results come with using the stated amount of maple syrup. For a lower sugar option, replace half of the amount with two tablespoons of applesauce and add in a few drops of stevia.
