    Peanut Butter Chocolate Chip Nice Cream

    Smooth and creamy 'nice' cream, made with bananas, peanut butter, vanilla, milk, and chocolate chips. This is a favorite treat around here!

    How's about a quick and easy recipe for the impending summer heat?

    I don't know about you, but the recipes that people make for themselves on a daily or weekly basis are the ones that are most interesting to me.

    You know the kind. Usually they come about to satisfy some primitive craving and they're adjusted to the ingredients one has on hand, as well as personal preference.

    This is that type of recipe.

    I started making this for Sam because he wanted ice cream, and I wanted to make him something healthy.

    Gradually, the other kids tried it and loved it, so it has become a staple around here. Recently, Natalie asked me how to make it so she could make it for herself, so I decided I need to get it up on the bloggy, stat!

    What is nice cream?

    Nice cream is a modern recipe made with frozen bananas and milk, usually a dairy-free variety.

    I'm not sure who initially created it, but good for them!

    What's 'nice' about it is that, unlike ice cream, there's no added sugar! The recipe relies totally on the sweetness from the bananas.

    This is why it's important to freeze your bananas when they are extra ripe and sweet.

    Steps to making nice cream

    It seems everyone has their own way of making nice cream. The following steps show how I've had the best luck!

    The first thing I do is add two frozen bananas to a Vitamix, along with a big splash of any milk you like. (P.s. You definitely need some type of high-powered blender to make this recipe!)

    • Frozen bananas in a blender.
    • Frozen bananas and milk in a blender.

    Start the blender on low, then slowly increase your speed and use the tamper to help the mixture blend. Don't use too much milk or you'll have a more liquid-y consistency.

    Add in the vanilla extract and peanut butter and blend.

    Lastly, add in the chocolate chips. I like to add these at the end to just barely break them up, leaving some bigger bites for munching!

    Can nice cream be frozen?

    Yes, but depending on what milk you use, the mixture can take on an 'icy' taste and texture. You might remedy this by using full-fat coconut milk or heavy cream.

    In my opinion, it is best to eat your nice cream right away!

    Recipe variations

    Use any nut or seed butter you like in place of the peanut butter.

    Add in some mini marshmallows for the kids to give them a more rocky road type treat! Sam loves it when I do this.

    Ingredients

    • 2 large frozen bananas
    • large splash milk of your choice
    • 1 (heaping) Tablespoon peanut butter
    • 1 teaspoon vanilla extract
    • 3 Tablespoons chocolate chips

    Instructions

    • Add the frozen bananas and a splash of milk into a high-speed blender.
    • Blend on low, slowly increasing the speed until smooth. Use a tamper to help the process.
    • Add in the vanilla and peanut butter and blend until smooth.
    • Lastly, add in the chocolate chips, blending to get the consistency you want.

    Nutrition facts based on using 1/4 cup unsweetened almond milk and one tablespoon of peanut butter.
