Soft and cake-like chocolate chunk bars made with coconut flour, coconut oil, eggs, and maple syrup. A perfect grain-free treat for kids and adults!

I used to loathe coconut.
The texture, the smell, the taste were all incredibly off-putting to me. That me would not recognize the coconut-crazed individual I've morphed into.
Many a-coconut product abound in my home.
Coconut oil, coconut butter, coconut shreds, coconut flour, and, of course, I pretty much always have my Coconut Milk on hand.
These bars are the perfect vehicle for the flour. They're very satisfying and filling, as they boast good amounts of fiber, fat, and protein.
My husband went nuts for these, comparing them to pound cake and angel food cake.
Try them, they're pretty irresistible!

Recipe tips
I typically top them with a combination of chopped dark and unsweetened chocolate bars.
Room Temperature ingredients are important in this recipe. It will prevent clumping when mixing.
Walnuts and/or coconut shreds would both be nice additions to these!
Coconut Chocolate Chunk Bars
Ingredients
- ½ cup coconut flour 60 grams
- ½ teaspoon baking powder
- ¼ teaspoon sea salt
- 2 large eggs
- ¼ cup melted coconut oil
- ¼ cup maple syrup
- 5 Tablespoons milk of your choice
- 1 teaspoon vanilla extract
- ¼ cup chopped dark or unsweetened chocolate (more or less, as desired)
Instructions
- It's important to begin with ROOM TEMPERATURE ingredients!
- Preheat the oven to 350 degrees.
- In a small bowl, mix the flour, baking powder, and salt.
- In a medium bowl, mix the eggs, oil, syrup, milk, and vanilla.
- Pour the dry ingredients into the egg mixture and stir until everything is well combined.
- Let the batter sit for a moment so that the coconut flour can absorb the liquid.
- Pour the batter into a well-oiled loaf pan.
- Top with chocolate.
- Bake 20-22 minutes, until the top is set (not jiggly) and the sides are golden brown.
- Cool 10 minutes.

I used to not like coconut either, but technically that is still true in a way. I was only exposed to the sweetened variety and I really didn't and still don't like that. Natural or unsweetened? Oh man I love the stuff!
