Soft and cake-like coconut chocolate chunk bars made from coconut flour, coconut oil, eggs, and brown rice syrup. A perfect low sugar treat for kids and adults!
I used to loathe coconut.
The texture, the smell, the taste were all incredibly off-putting to me.
That me would not recognize the current coconut-crazed individual I've morphed into.
Many a-coconut product abound in my home.
Coconut oil, coconut butter, coconut shreds, big and small, coconut flour...if it's true that you are what you eat...
I'm waiting for the inevitable FDA PSA that coconut is actually bad for you, and that it causes high cholesterol, low platelets, cancer, elliptical pupils, or any of the like.
It seems that's the unavoidable destination for most health crazes.
Until then, however, I will continue to partake of its buttery goodness.
These bars are the perfect vehicle for the flour. I make these on days I'm in search of a good grain-free treat!
They're very satisfying and filling, as they boast good amounts of both fat and protein. They're also delicious!
I brought these to a play date this weekend, and all but one of the kids gobbled them up. A pretty good sign, I think!
I typically top them with a combination of dark and unsweetened chocolate bars and infuse them with good amounts of cinnamon and vanilla. This all lends to flavor and sweetness, without having to add too much actual sweetener. Try them, they're pretty irresistible!
Coconut Chocolate Chunk Bars
Ingredients
- ½ c . coconut flour , measured correctly (see Notes)
- ½ t . baking powder
- ¼ t . sea salt
- ½ t . cinnamon
- ⅛ t . powdered stevia extract , optional
- 2 eggs
- ¼ c . coconut oil , melted
- 2 T . brown rice syrup
- ¼ c . water
- ¼ c . milk of your choice
- 1 T . vanilla
- 2-3 T . chopped dark or unsweetened chocolate (more or less, as desired)
Instructions
- It's important to begin with ROOM TEMPERATURE ingredients!
- Preheat the oven to 350 degrees.
- In a small bowl, mix the flour, baking powder, salt, cinnamon, and stevia, if using.
- In a medium bowl, mix the eggs, oil, syrup, water, milk, and vanilla.
- Pour the dry ingredients into the egg mixture and stir until everything is well combined.
- Let the batter sit for a moment so that the coconut flour can absorb the liquid.
- Pour the batter into a well-oiled loaf pan.
- Top with the chocolate.
- Bake 24-28 minutes, until the top is set (not jiggly) and the sides are golden brown.
- Cool 10 minutes.
- Cut and enjoy!

Again, ROOM TEMPERATURE ingredients are important in this recipe.
This is how to correctly measure flour. This is especially important when you're dealing with coconut flour, as it is highly absorbable.
Walnuts and/or coconut shreds would both be nice additions to these!

I used to not like coconut either, but technically that is still true in a way. I was only exposed to the sweetened variety and I really didn't and still don't like that. Natural or unsweetened? Oh man I love the stuff!
