    Double Chocolate Chip Muffins (Oil-Free, GF, Vegan) --Video

    These muffins have become one of my favorite treats!

    With no added oil, eggs, or weird flours/starches, they are make a healthy, yet delicious snack for any time of the day!

    Adapted from this recipe

    Serves: 8 muffins

    Calories: 108

    Fat: 2.4 grams

    Carbs: 22.2 grams

    Sugar: 14.9 grams (based on using stevia)

    Fiber: 2.2 grams

    Protein: 1.9 grams

    Weight Watchers points (new system): 3

      I made the muffins w/ gluten free oats ground into flour and they were delicious but didnt rise very well. Any ideas why this would have happened?

        Hi Christy,

        They're not meant to rise too much, as I wanted the texture to be a bit denser, a la brownies. You could try adding in a bit more baking powder if you like next time!

        It reads on the screen, but it goes by a bit too fast...375 for 20 minutes. Sorry about that!

      This looks like a great recipe. Do you include written instructions? It is so much easier for me to have it written down. Also I didn't catch what temperature and for how long to bake them. Thank you for offering something yummy and healthy!

        Hi Heather,

        The bake temp/time is 375 for 20 minutes, and the ingredients are as follows:
        1 c. applesauce
        1/2 c. oat flour
        1/3 c. cocoa powder
        6 T. coconut sugar
        2 t. baking powder
        1/2 t. baking soda
        1/2 t. sea salt
        dash cinnamon
        1/8 t. powdered stevia extract (or 2 more T. coconut sugar)
        1 t. vanilla
        1/4 c. chocolate chips or chopped dark chocolate
