    I hope everyone had a great Halloween weekend!

    Mine was literally spent sick on the couch, in and out of consciousness, watching countless episodes of Diners, Drive-Ins, and Dives.

    I love that show!

    It's awesome to see all the different food creations from all over the country, and, better yet, to see what customers like.

    Some things surprise me, like Korean hot dogs, which are basically large hot dogs piled high with braised short ribs and a sweet and tangy slaw.

    There are all sorts of wild creations that people go nuts for, things I would never get down with, like triple-decker burgers with the fries already included as a greasy layer.

    Some of my favorite shows are the ones that showcase breakfast, my favorite meal of the day.

    Everything from sweet pancakes to eggs any way you can imagine to biscuits and gravy are featured. I've never tried biscuits and gravy, but to watch the chefs on the show make them is quite tempting!

    Today I want to showcase a breakfast I've been enjoying immensely, and it doesn't hurt that it tastes like a big bowl of cookie dough without the sugar and guilt!

    The way I prepare this is to assemble most of the ingredients the night before and re-blend it all in the morning. I like it super thick, as it truly reminds me of eating dough, but you can add a bit more milk in the morning to thin it out if you wish.

    The oats are very satiating, and it's truly like eating a dessert for me. I've even made this mid-day to enjoy as my nighttime snack. I just can't get the thick and creamy taste out of my head!

    Like any other cereal, you can top this however you like, with things like raisins, walnuts, and cacao nibs, all of which add a delicious texture and taste.

    Any way you make this, I am sure you will enjoy eating 'dough' in the morning as much as I do!

    Doughy Oatmeal Breakfast Bowl (Vegan, Gluten-Free)

    Ingredients

    • 1 c. rolled oats I use Country Choice Gluten-Free Organic Oats
    • 1 T. hemp seeds
    • 1 T. raw walnuts
    • 1 t. chia seeds
    • 4 large soft dates
    • ⅛ t. sea salt
    • ¼ t. cinnamon
    • ½ t. vanilla
    • 1 c. water or milk plus a bit more in the morning, if desired
    • TOPPINGS IDEAS:
    • raw seeds or nuts
    • dried fruit
    • cacao nibs
    • honey/maple syrup
    • bee pollen

    Instructions

    • Blend everything together the night before (or at least four hours before) you wish to eat it.
    • Cover and refrigerate.
    • In the morning, re-blend the contents briefly, adding in an extra tablespoon or so of milk or water as desired.
    • Pour into a bowl, top with your favorite toppings, and enjoy!

    They were such good girls this night and made such pretty princesses! As I was taking their pictures, I just couldn't believe how much they've grown up.

      Way to go Lauren, another great recipe! I didnt have any hemp hearts so I just left them out. We topped it with hazelnuts, chocolate chips and bananas. I know I keep saying this in all of my comments but...it was soooo good. It was thick and creamy but not gloopy that it sticks to the roof of your mouth. Yum. Thanks.

      This sounds delicious Lauren! I cannot wait to try it for breakfast or as a midnight snack! I love watching shows on the Food network as well - the one you mentioned is a guilty pleasure of mine!! Your girls are adorable!

      Aaah, I got my Halloween pic. 🙂 I was going to ask that you post one, but I didn't want to be one of "THOSE" people. LOL I figured if you wanted to share you would. But, my GOODNESS, they're so BIG!! I feel like they've doubled in size from the last pic of them that you posted. 🙂 They're starting to look more like you and your husband, I think, the older they get.

      I hope you, at least, got to take the girls trick-or-treating for a little bit, and, that, of course, you're now no longer illin'. 🙂
