    Energizing Blueberry Breakfast Pudding (Vegan, Paleo)

    Lately, my breakfasts have become a bit boring.

    I rotate between two fried eggs with a piece of sprouted wheat toast and strawberry jelly (I love the eggs with the sweet fruit spread), overnight oats, or a smoothie of some sort.

    All are delicious in their own right, but recently, I haven't been looking forward to any of them.

    I typically like my breakfasts to be fast, easy, and low in sugar (I'd rather have an after-dinner dessert than use up my 'sugar points' for the day on breakfast), and this pudding deliciously hits all three marks.

    I've always been a fan of chocolate avocado pudding as well as the combination of chocolate and berries, so I thought, why not all of those ingredients together? I use a modest amount of cocoa powder just to give it a slight chocolate taste, while the addition of coconut milk and shreds adds sweetness and flavor.

    It's makes one of the most elegant, yet appetizing, breakfasts I've had to date.

    Blueberry Choco-Coconut Breakfast Pudding (Vegan, Paleo)

    Ingredients

    • 1 avocado
    • 1 c. frozen blueberries
    • 1 T. cocoa powder
    • 2 T. coconut milk or another dairy-free milk
    • 2 T. maple syrup you can also use 1/8 t. powdered stevia extract or a combination of the two
    • pinch sea salt
    • ½ t. vanilla
    • 1 t. unsweetened coconut for topping

    Instructions

    • Process all of the ingredients until smooth.
    • Top with the coconut shreds and enjoy!

    Notes

    Nutrition facts are based on using coconut milk, one tablespoon of maple syrup, and 1/16 teaspoon of stevia. Weight Watchers points (new system): 8

    My daughters and I typically share this, as it is quite rich. They enjoy it immensely, and we all have a focused energy afterwards that I imagine is due in large part to the good fats from both the avocado and coconut.

    I ate this yesterday and literally proceeded to clean my house like a 50's housewife on meth. 😀

      I made it & it was good. I eat paleoish so I substituted 1/2 of a banana for the added sweetener. It was a little to thick in the beginning for my nutribullet so I added an extra tablespoon of So Delicious Coconut milk. Thanks for the recipes.

      I'm with you…I LOVE eggs with my homemade strawberry freezer jam…or raspberry or blackberry!)…I really miss granola…for the "crunch" factor and the EASINESS factor…but most…even most on the "healthy" blogs are quite full of fats (tons of nuts)…or sugar (cups of pitted Medjool dates etc!….

      This offering looks so LUSH!!…I so wish I LIKED avocado…but I unfortunately have NEVER liked it…although I KNOW it is so good for you. Not so "keen" on chocolate for brekkie either…I know…I know…something must be wrong with me!!…If I used a silken non-GMO tofu…do you think it could "mimick" the texture here…omitting the cocoa and using vanilla and frozen blueberries?…Thanks for continuous inspiration!

        Hi Donna!

        I think you could substitute tofu...an avocado is probably equal to 1/2 cup of flesh?...so maybe use 1/2 cup of tofu. The chocolate can be easily eliminated, or you could have this for dessert with it added in. 🙂
