Honey Banana Muffins

This is one of our favorite muffin recipes, and they’re quite versatile.

Honey adds a touch of sweetness, while whole grain spelt flour adds fiber and nutrition.

Banana is a great, sugar-free way to sweeten baked recipes, so I’m often looking for ways to use it.

These are banana muffins in the truest sense, as they contain three mashed bananas. Sometimes, we add in 1/2 cup of blueberries or chocolate chips, and I’ve even substituted some of the flour for oat bran. The recipe has been very forgiving to all these variations.

Ingredients and substitutions

  • Bananas
  • Melted butter – Olive oil can also be used.
  • Honey – Maple syrup can also be substituted.
  • Vanilla extract
  • Egg – If you’re allergic to eggs, egg substitutes typically work well in muffin recipes.
  • Spelt flour – Whole wheat or barley flour can also be used.
  • Baking powder
  • Baking soda
  • Sea salt

Recipe steps

Preheat the oven. Mash the bananas and add them to a bowl.

Stir in the butter, honey, vanilla, and egg.

Add to the same bowl the flour, baking powder, baking soda, and salt. This recipe works best if you measure your flour!

Stir the batter gently until well combined.

Dollop the batter among 12 paper muffin cups and bake for 12-15 minutes.

Recipe notes

For baked recipes, such as muffins and cookies, it’s very helpful to have a good kitchen scale, as we all measure flour differently. This helps to ensure the recipe comes out like it should.

Honey Banana Muffins

These delicious honey banana muffins make a great treat or snack! They're packed full of banana flavor and offer just a touch of honey sweetness.

Ingredients

  • 3 large bananas mashed; about 350 grams
  • ¼ cup melted butter
  • 2 Tablespoons honey
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 180 grams spelt flour about one cup plus two tablespoons
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon sea salt

Instructions

  • Preheat the oven to 375℉.
  • Mix the mashed banana with the melted butter, honey, vanilla, and egg.
  • Add in the flour, baking powder, baking soda, and salt.
  • Stir gently until dry ingredients are moistened.
  • Dollop the batter among 12 paper muffin cups.
  • Bake 12-14 minutes or until springy to the touch.
