This delicious iced pumpkin spice latte is a great drink to wake up with this Fall! NO pumpkin puree is needed for this recipe, and there's NO added sugar.
I have a confession...I don't drink coffee.
The collective boos and sighs are almost palpable!
The thing is, I used to drink coffee, and it would mess up my energy and sleep, so I quit. (Side note, my friend Holly has a Youtube video about quitting coffee after 20 years that you might find interesting!)
This particular recipe was created by my illustrious daughter, Natalie.
She loves coffee and also has a love of pumpkin spice, so she created her own drink that's cheaper and far healthier than anything you'll find at Starbucks!
Ingredients and substitutions
This post shows you start to finish how my daughter creates this drink, beginning with brewing your own coffee (no coffee maker needed!).
- Coffee grounds - We have a big bag from Costco.
- Water
- Pumpkin spice
- Half and half - Coconut milk also works.
- Stevia
Recipe steps
I photographed all of Natalie's steps for this post on my own after watching her make it multiple times. It looked so delicious, that I even sampled the final drink (which was awesome, especially with some whipped cream and extra pumpkin spice!).
First step is to add the water and coffee grounds to a medium saucepan and bring the mixture to a boil.
Once you see steam, add in the pumpkin pie spice. Natalie says it mixes in better this way. (No one likes pumpkin spice clumps, ya know what I'm sayin'?)
Let the coffee simmer for 2-3 minutes, then take it off the burner and let it cool.
Meanwhile, add the half and half and stevia to a shaker cup of some sort. We use a small mason jar with a fitted lid.
Shake the two until foamy.
Add the coffee to the half and half and give it a few more good shakes.
Next, add in about 5-7 regular ice cubes and shake it again.
Top the coffee with freshly whipped cream and another sprinkle of pumpkin pie spice and enjoy!
Recipe notes
No major notes except to say that this is NOT meant to be any popular chain's copycat. This is my daughter's version that she loves, and I thought the simplicity and economical factors would make it a great post.
Iced Pumpkin Spice Latte
Ingredients
- 1 cup water
- 1 Tablespoon ground coffee of your choice
- ½ teaspoon pumpkin spice
- ¼ cup half and half or coconut milk
- 10-12 drops stevia
- 5-7 regular ice cubes
Instructions
- Boil the water with the coffee grounds and pumpkin spice.
- Reduce heat to a simmer and let cook for 2-3 minutes.
- Remove pot from the heat and let sit to cool for a few minutes.
- Meanwhile, add the half and half and stevia to a shaker cup of some sort. Natalie uses a mason jar with a fitted lid.
- Shake the jar vigorously until a bit foamy. You could also use a milk foamer or small blender to create a good foam.
- Strain the coffee and add it to the foamy half and half.
- Add 5-7 ice cubes and give it all another good shake.
- Top with fresh whipped cream and extra spice for a more satisfying experience!
