Instant Pot Shredded Chicken Breasts - This yummy recipe combines a few basic ingredients to make delicious, moist, and flavorful shredded chicken that can be used in many different ways!

Okay, I know there are a ton of recipes for Instant Pot chicken! I live this world, so trust me when I say I know.
I really felt like this recipe was simple, boring, etcetera, and why post it?
Well, I guess because after reading many of the recipes already available, I didn't see one like mine...and I think mine is pretty darn good!
The addition of one simple ingredient really makes this shredded chicken so flavorful!

How to use Instant Pot shredded chicken
Once you have your chicken, what the heck do you do with it??
Well, us kids over here have tons of ways to employ it, including:
-Salads
-Tacos and tostadas
-Enchiladas (here's a good Enchilada Sauce!)
-Chicken salad
-Burritos (check out my Spelt Flour Tortillas for these!)
-Stir-fries
-Snacks
We love chicken over here, so making a big batch and having it on hand saves time!
Recipe notes
The chicken breasts I've used have ranged in weight. Anything from 6-10 ounces apiece is normal. I don't find the weight to be a huge factor in how well this recipe works.
This is the model of Instant Pot I use for this recipe.
Instant Pot Shredded Chicken Breasts
Ingredients
- 3 large chicken breasts see Notes
- 1 cup water or broth
- ½ large yellow onion roughly chopped into chunks
- 1 large bay leaf
- 1 tsp sea salt
- ½ tsp black pepper
Instructions
- Place all of the ingredients into an Instant Pot.
- Set the Pot to cook on high pressure for 25 minutes.
- Naturally release the pressure (AKA, don't touch it!) for 10 minutes.
- Manually release remaining pressure.
- Shred chicken and use as desired.
