Ingredients and substitutions
- Olive oil
- Shallot - Red onion can be substituted.
- Brussels sprouts
- Dijon mustard
- Maple syrup
- Salt and pepper
- Water
Recipe steps
Heat a pan over medium heat and add the oil. Add the sprouts and saute for about five minutes until lightly golden.
Add in the water and cover the pan, allowing the sprouts to steam for 6-8 minutes until soft.
Meanwhile, in a small bowl, stir together the mustard and maple syrup. Add the mixture to the pan and stir to coat the sprouts.
Serve warm with a good sprinkle of black pepper.

Maple Mustard Brussels Sprouts
Ingredients
- 2 Tablespoons olive oil
- ¼ cup shallot chopped fine
- 4 cups Brussels sprouts, halved or quartered, if on the large side about one pound
- ½ teaspoon sea salt plus more to taste
- ⅓ cup water
- ¼ cup Dijon mustard
- 2 Tablespoons maple syrup
- black pepper to taste
Instructions
- Place a large skillet over medium heat.
- Add the oil and shallot and saute for 3-4 minutes until softened.
- Stir in the Brussels sprouts, about 1/2 teaspoon of salt, and saute for 4-5 minutes.
- Add in the water and cover the pan.
- Allow the sprouts to steam over medium heat for about 6-8 minutes until fork-tender. If the water evaporates, add in another tablespoon as needed.
- In a small bowl, stir together the mustard and maple syrup until smooth.
- Add the mixture into the sprouts and stir to combine.
- Serve warm with a few grinds of black pepper.

This was insanely delicious!!! And you're right - the hardest part was trimming the Brussels sprouts!
I was reading your post and wondering how you keep the stinky smell off of the sprouts. I typically stir-fry them and add cumin powder to minimize the smell. How surprised I was to find out that steaming completely removed the off smell!!
