Earth Angel is the ultimate Valentine's day-slash-love song to me.
That part when George McFly takes Lorraine's face in his hands and kisses her is one of my favorite romantic movie moments...largely because Earth Angel is playing in the background.
P.s. If you don't catch my film reference, you ought have mad shame.
Ah, but life is anything but a series of movie moments, heh?
My husband and I are lucky if we get an uninterrupted ten minutes together, much less time for a romantic dance or kiss.
It's funny how so many marriage clichés end up being true.
Too tired, too busy, too much on the mind...there are so many reasons why life takes a turn for the 'unromantic'.
I'm actually the one in our relationship to get caught up in all the inconsequential junk.
Gotta make this, gotta clean that, feed the dog, change Sammy's diaper, call my mom, pay that bill...my multi-tasking woman mind is in constant overdrive.
Ironically, I have a big, beefy, manly hubby who is the sensitive one in our union.
He's the one to call attention to the fact that we haven't kissed all day or that we need some time to sit and talk.
While I don't always appreciate his awareness, deep down, I am grateful for it. Someone's gotta do it or we'll end up roommates!
Let's stop yakking about me and talk berry crisps. Specifically, those made in a mug...er, small dish. 🙂
Everyone and their brother is focused on chocolate right now, so I thought I'd offer something a bit different.
These mug berry crisps are not only delicious, but easy to make, and healthy to boot!
As a little twist, the 'crisp' part is actually on the bottom, making for a sweet buttery find when you dig in.
I just use bags of mixed frozen berries for these, but you could focus on whatever berries you personally prefer.
I like a strong combo of strawberries and blueberries with a few of the others strewn in.
The sugar content of these is also subjective.
You know me, I stick to the low end, but I know that's not for everyone.
Topped with a big dollop of whipped cream and some chocolate shavings, this makes a great treat for anytime of the year!
Healthy Mug Berry Crisp for Two
Ingredients
- ¼ c . oats
- ¼ c . walnuts (or more oats for nut-free)
- 2 T . oat flour
- 4 t . coconut sugar
- couple dashes sea salt
- cinnamon , to taste (I use about 1/2 teaspoon)
- 2 T . coconut oil or butter , semi-solid
- 1 ½ c . frozen berries of your choice
Instructions
- Preheat oven to 375 degrees.
- Measure out your frozen berries, rinse them, and let them stand in a colander.
- In a small bowl, mix oats, walnuts, flour, sugar, salt, and cinnamon.
- Cut in the butter or oil with a fork until mixture is 'pebbly' in appearance.
- Oil two small (1-2 cup) ramekins or mugs.
- Divide mixture between the two.
- Top each with 3/4 cup berries.
- Bake 25-30 minutes until bubbly.
- Cool and enjoy!

You can increase or decrease the sugar according to your preference. I use one teaspoon per crisp, but my hubby likes two, which is what is posted.
If you are nut-free, just use more oats in place of the walnuts.
