Just another truffle recipe?
...maybe...but this blog is where I post what I've been eating, making, etc., and since I've been eating a boatload of these lately, I had to post them!
My husband and I literally fight over these (and by 'fight', I mean I hide them, he sniffs them out, eats them, and then gets yelled at and beat by yours truly). 😀
So, with all of the truffle/snack-ball recipes out there, let's have a gander at why you might want to try these:
- Only 5 ingredients (Claire Robinson says salt is a freebie, so no comment lip.)
- Sugar and sweetener-free
- Added cinnamon helps control insulin and blood sugar levels
- Oats add fiber and keep you full
- Walnuts add omega-3 for things like healthy skin and depression
- Only 82 calories per truffle
Cinnamon Oatmeal Truffles (Vegan, Gluten-Free)
Ingredients
- 1 c. oats
- ½ c. walnuts pumpkin seeds also work if you are nut-free
- ¾ t. cinnamon pie spice is also delicious
- ¼ t. salt
- 12 dates I use Medjool dates, so they are fairly large
- 1 T. water
Instructions
- Process the oats, walnuts, cinnamon, and salt until the oats and walnuts are ground into the consistency of a meal.
- Remove the oat/walnut mix.
- Process dates until they are broken down and form a ball of paste in the processor.
- Add back the oat/walnut mix, along with the water.
- Process until well combined.
- Roll into approximately 12 balls.
- Eat immediately or refrigerate.

I like to eat these for snacks or when I start craving something sweet. I've even made these at night a few times in order to avoid eating cookies right before going to bed.
There's nothing incredibly spectacular about this recipe, but I love them so much and had to share them.
So often I've stood staring blankly into the fridge, hungry and searching for something to eat that I don't possess, when it dawns on me that these babies are hidden in the veggie drawer. Teehee.

These are delicious and very filling. My mom expects truffles to have a surprise in the center and I suppose I could put a nut or a date in there but I don't want to raise the calorie count, so I just call them oatmeal bites.

PS I forgot to thank you for the recipe, I am very bad at coming up with ideas so this has been a great addition to the healthy repertoire. Also I sometimes use a slap-type chopper so the balls are more bumpy, just a variation - and I mix the final product by pressing it around in a shaker bag -or give it to a kid to do - then use a cookie dough spoon with a squishy back because I am also terrible at getting uniform sizes.

Hello! Trying this recipe this morning...thought I had all the ingredients but realized I forgot the Walnuts! Its currently pouring rain outside and I do not want to go out in it to grab some. But the only other nut I have is Cashews...which I love, do you think they'd ruin it? Should I just add more oats to compensate the difference in amount? Idc at all about the nutritional info, so if thats the only change I won't care! Lol

Hey,just wondering it is quick oats that we are supposed to use? And no need to cook them..Will these be ok to give to my 3 year old?

Hi Abeera,
You can use either quick or regular oats for these, no need to bake! You have to make the call with your toddler, as I don't know your allergy situation or what he/she can eat, but I would give them to my girls! 🙂

I think your nutritional information is incorrect. If you are using 12 dates to make 12 truffles, that is one date per truffle. One medjool date has 16 - 24g sugar depending on size. That's a lot more than 5!

You'll find the nutritional information for dates to be extremely varied, depending on what site you use. Mine weigh anywhere from 0.3-0.5 of an ounce, which, at it's highest sugar content, only has nine grams of sugar, so I'm unsure where you're getting your stats. I provide the nutritional information as a FREE service here, and do not calculate every single gram of anything, so please use it at your own risk.

These look great! I have a very similar recipe, Snickerdoodle bites, but I use maple syrup instead of dates for the sweetener and almond butter. I unfortunately don't like dates. 🙁 I really wish I did because I know how good they are for us! 🙂

Thank you! I can tell you that I love raw almond butter, but recently became allergic to it! It's not exactly the same as having a distaste for a food, but we both have foods we'd like to be eating! 🙂
