Happy Firefighter Friday everyone!
For some of these posts, I will often spend some time perusing the web for interesting facts, cartoons, and stories about firemen to share. While doing this very thing yesterday afternoon, I stumbled across a fireman’s blog!
A lot of you who come for the recipes are probably extremely bored right now, but bear with me. This blog is obviously anonymous, as firemen are not allowed to divulge patient information, but nevertheless, it is a compelling read. It is intelligently laid out with definitions to certain terms most laymen wouldn’t know, and it touches upon the writer’s personal and professional life. You fireboys should check it out! 🙂
On to the recipe!
Two great things about this cole slaw are it’s high in protein and there is NO mayo!
I don’t know about you, but I have had a devil of a time finding a mayonnaise in the store that doesn’t have some questionable ingredient, and it is a beeyotch to make your own, so cole slaw has often eluded me.
NO-MAYO COLE SLAW
1 small ripe avocado (you want about 1/2-3/4 c. flesh)
1/2 c. greek yogurt (I like 2% Fage)
1 T. maple syrup
1 T. rice vinegar
1/2 T. dijon mustard
1 T. red onion, grated
1/8-1/4 t. salt
a few grinds black pepper
1-3 T. water, as desired for thick/thin-ness
1/2 head of green cabbage, shredded
1 large carrot, grated
Process the avocado with the yogurt until combined a bit. Add the rest and process until creamy. Add water to thin out the mixture, if desired.
Toss all. Let sit in the fridge to marinate (it tastes much better this way!). Serve!
Delicious, nutritious, and no shady ingredients here. A perfect accompaniment to sloppy joes, hamburgers, or apple juice chicken.
