These delicious oatmeal cream pies are made with less sugar than the traditional version! Oatmeal cookies are sandwiched around a higher protein cream cheese 'frosting' that's also lower in sugar.

These oatmeal cream pies are so scrumptious, and I have to tell you, I'm very proud of how little sugar goes into making them.
The kids all gave these a big thumbs up, so I knew I needed to post the recipe.
This recipe is fun for days when you have a little extra time or want to try something new!
Both the cookie portion and the frosting are easy to make, and putting it all together in a 'pie' form is quite satisfying.
Ingredients and substitutions

For the cookies:
- Butter and/or coconut oil - I like to use a combination of both.
- Sugar - I've been using unrefined cane sugar, as coconut sugar has tended to dry out some of my baking.
- Applesauce - This helps the cookie hold together.
- Flour - I've used oat, spelt, and whole wheat with great results. Spelt and whole wheat hold together better, as there is no egg in this recipe.
- Quick oats
- Baking soda
- Baking powder
- Sea salt
- Cinnamon
For the frosting:
- Cream cheese
- Greek yogurt
- Maple syrup
- Stevia - Optional
Recipe steps
Begin by whisking together the butter, coconut oil, sugar, and applesauce together in a bowl.
Stir in the flour, oats, baking powder, baking soda, salt, and cinnamon. Keep stirring to form a dough.


Using your hands, make eight cookies with the dough.
Place them onto a parchment paper-lined baking sheet and press to flatten.

Bake the cookies for 10 minutes.
While the cookies bake, whip together the cream cheese, yogurt, and maple syrup to form the frosting.


Create your cream pies by spreading the frosting equally among four cookies. Top with the remaining four cookies and enjoy!

Healthy Oatmeal Cream Pies
Ingredients
COOKIES
- 2 Tablespoons softened butter
- 2 Tablespoons softened coconut oil
- 2 Tablespoons applesauce
- 2 Tablespoons cane sugar
- ยพ cup quick oats
- 6 Tablespoons oat or spelt flour
- โ teaspoon baking powder
- โ teaspoon baking soda
- โ teaspoon sea salt
- ยผ teaspoon cinnamon
FROSTING
- ยผ cup cream cheese
- 2 Tablespoon Greek yogurt
- 1 Tablespoon maple syrup
- few drops stevia as desired for extra sweetness
Instructions
- Begin with room temperature ingredients, as coconut oil will clump when cold.
- Preheat the oven to 350โ.
- Whisk together the butter, oil, applesauce, and sugar.
- Stir in the oats, flour, baking powder, baking soda, salt, and cinnamon. Keep stirring to form a dough.
- Using your hands, form eight cookies with the dough and place them onto a parchment paper-lined baking sheet.
- Bake the cookies for 10 minutes.
- Meanwhile, whip together the ingredients for the frosting in a separate bowl.
- Cool the cookies, then spread the frosting mixture equally onto four cookies and top them with the remaining four cookies to make four pies.
