    Pasta Primavera and Eggplant Noodles

    Ah, the perils of eating these days. Hormone-laced meat, genetically-modified crops, moldy peanut butter, mercury-loaded fish, pesiticide-laden produce...it's a wonder we're all not walking around with hormonal imbalances, emotional distubances, and mutated limbs...oh wait, we are. All except that last one of course. 😉

    It's great to be a part of a community of like-minded bloggers that post health-conscious recipes tailoring to one ailment or another. If you like to soak your grains, there's a pancake/waffle recipe for you....gluten-free?...this girl has a plethora of recipes to choose from!....make your own coconut milk?....this lady has that and much more, and the 'more' part includes little ol' me today! 🙂

    Adrienne over at Whole New Mom has graciously allowed me to post today's recipe with her so head over there for the gluten-free, vegan, grain-free deliciousness!

      why do you limit the amount of grains you eat? Are they "bad"?

      I love the idea of eggplant noodles! We eat zucchini noodles often but I am eager to try this for variety and because I love eggplant! Thanks for the great idea!

        Thanks Dawn! They worked out really well, and they have a color that's similar to whole wheat noodles, so that's a nice bonus! 🙂
