This healthy and creamy strawberry avocado smoothie is thick enough to scoop; low in added sweeteners, NO bananas, easy to make!
I am currently rotating my breakfasts between two options...
...smoothies and over-easy eggs with Ezekiel cinnamon raisin toast.
Eggs and toast are typically reserved for days when I have a bit more time and can't fathom a cold smoothie on a cold day.
Smoothies are truly my favorite way to begin a day, however. They start my digestion off right and give me the pizazz I need to get going.
My go-to smoothie is a variation of this Choco-Berry delight, but when I'm seeking something cocoa-free, I reach for a fruit-based shake.
I originally found a variation of this on Allrecipes.com and have since adapted it to my own allergies and tastes.
The avocado keeps me full for a good while (not an easy task!), and the flavor reminds me a bit of a strawberry creamsicle.
This one is also a hit with my girls, and it makes a great breakfast for them on days we're running a bit behind.
Seven easy ingredients into the Vitamix, blend, drink (or rather, scoop), and go!
Scoop-able Strawberry Avocado Smoothie
Ingredients
- 1 avocado
- 1 c . orange juice
- ½ c . kefir , yogurt, or coconut milk
- 5 large , frozen strawberries
- 1 (heaping) t. honey
- ½ t . vanilla extract
- handful of spinach , if desired
- 6 ice cubes
Instructions
- Blend all until smooth and creamy.
- Enjoy!

This also makes great popsicles, if you're so inclined.
Adjust the sweetness to your taste by adding in a bit more honey or stevia.
For a dairy-free version, use dairy-free yogurt or coconut milk. Make your own coconut milk with this recipe.
For a lighter version, use 1/2 avocado instead of a whole one (cuts the calorie count to 460 and the fat content to 21.9 grams). It won't be as scoop-able though!

This smoothie sounds so yummy! And I'm always looking for a smoothie to keep me fuller longer, sometimes they aren't always up to the job. The avocado would definitely help. And it's so pretty! Bonus =)

My pickiest eater liked this smoothie! And I got to use up some kefir we don't love - we tried a new brand and it's more tangy than we like but it mixed wonderfully in this smoothie. I love how healthful and filling it is, a great breakfast that will stay with you a while.

Kodiak pancakes W blueberries, instead I use chunky blueberry jam to top them!

"Kodiak Cakes, Power Cakes 100% Whole Grain" they sell them at Costco, Target, Sprouts. Super easy. Don't know if you are able to tolerate the whole grains but I can. 2nd ingredient is 100% grain oat flour! Oh, it's making me h u n g r y ! Lol grin!
