These crispy, cinnamon-y, honey-sweetened graham crackers are a delicious treat that everyone will enjoy, and they're lower in sugar than most recipes!

I was having a hard time finding a 100% spelt flour graham cracker recipe, so I created my own!
These have a light, cinnamon honey flavor that's not too sweet, paired with a perfectly crunchy texture.
I've been working and re-working this recipe for a couple of months now, and the crackers received a thumbs up from every single member of the house.
My kids are enjoying taking them to school, as well as snacking on them at home. We've successfully used them in homemade s'mores, and I like dipping them in Greek yogurt or peanut butter.
They can also be ground up and used as a pie crust base!
Ingredients and substitutions
- Spelt flour - Whole wheat also works.
- Coconut sugar
- Baking powder
- Baking soda
- Sea salt
- Cinnamon
- Butter
- Honey - Maple syrup also works well!
- Water
Directions

First, mix together the dry ingredients. Add in the wet ingredients next and stir until a dough ball forms.


Place the dough onto a sheet of parchment paper and cover it with either plastic wrap or wax paper.
Roll the dough into a large rectangle. It should be about 1/8-inch in thickness.
Cut the dough into squares or rectangles, as desired, with a pizza cutter, then poke each a couple of times with a fork.


Bake 15-20 minutes and let cool.

Recipe tips
If your crackers aren't crisp after cooling, they either weren't rolled thin enough or didn't bake long enough.

Spelt Flour Graham Crackers (Great for S'mores or Pie Crust!)
Ingredients
DRY INGREDIENTS
- 1 cup whole spelt flour
- ½ teaspoon baking powder
- ¼ teaspoon baking soda
- ¼ teaspoon sea salt
- ¼ teaspoon cinnamon
- 2 Tablespoons coconut sugar
WET INGREDIENTS
- ¼ cup melted butter
- 2 Tablespoons honey
- 3 Tablespoons water
Instructions
- Preheat oven to 350℉.
- Mix the dry ingredients together in a large bowl.
- Add in the wet ingredients and mix until the dough forms a ball.
- Place the dough ball onto a sheet of parchment paper large enough to fit your baking pan.
- Cover the dough with wax paper or plastic wrap and roll out to about 1/8-inch thick.
- Cut the crackers into squares or rectangles with a pizza cutter and poke them a couple of times with a fork.
- Bake for 15-20 minutes or until crisp and just beginning to brown.
- Allow them to cool completely; this is when they really crisp up!
