Healthy Sprinkle Muffins (Lower Sugar)

These delicious sprinkle muffins are made healthier with the additions of whole wheat pastry flour and plain yogurt. They’re sweetened with a small amount of maple syrup, making them great for kids!

My youngest daughter is obsessed with sprinkles. Truly, just about every time we make a treat, she wants something she can add sprinkles to. Sprinkles or blueberries…

Ergo, I created this delicious muffin recipe for her!

These are light and fluffy, thanks in large part to the whole wheat pastry flour.

I also like that I squeezed half of a cup of yogurt in these, as it lends protein, and that they have a modest amount of sweetener. The sprinkles pick up the slack, don’t worry.

Ingredients and substitutions

  • Whole wheat pastry flour – Be sure to measure your flour for these using a food scale. All purpose flour could substitute, though you’d be missing out on some fiber.
  • Baking powder
  • Baking soda
  • Sea salt
  • Plain yogurt – Use regular full-fat or low-fat yogurt, not Greek yogurt.
  • Egg
  • Butter – Melted coconut oil or grapeseed oil can also be used.
  • Maple syrup
  • Vanilla extract
  • Sprinkles – These are my favorite healthy sprinkles.

Directions

In a large bowl, whisk together the flour, baking powder, baking soda, and salt.

Separately, whisk the yogurt, egg, butter, maple syrup, and vanilla.

Next, add the wet mixture into the flour bowl, along with the sprinkles, and stir just until moistened.

Then, divide the batter among eight muffin cups and bake!

Recipe tips

Be sure to measure your flour for best texture and taste.

In lieu of paper muffin cups, I like to spray my muffin tin with a light coating of olive oil. I think this adds a delicious and delightful golden coating to the outside of the muffin! I use an oil sprayer for this. Don’t purchase the one in the link, that’s just for a visual. Go to Home Goods or TJMaxx, they’re far cheaper!

For extra sweetness, add in a few drops of stevia.

Ingredients

  • 120 grams whole wheat pastry flour a very lightly packed cup
  • ½ teaspoon baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon sea salt
  • teaspoon powdered stevia
  • ½ cup plain yogurt
  • 2 Tablespoons melted butter
  • 3 Tablespoons maple syrup
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 3 Tablespoons healthy sprinkles

Instructions

  • Preheat the oven to 350℉.
  • In a large bowl, mix the flour, baking powder, baking soda, salt, and stevia.
  • In a separate bowl, whisk the yogurt, butter, maple syrup, egg, and vanilla.
  • Add the wet mixture to the flour bowl, along with two tablespoons of the sprinkles, and stir just until moistened.
  • Lightly spray eight cups on a muffin tin with olive oil. Alternatively, you can butter eight of the muffin cups or use paper muffin cups.
  • Divide the batter between the eight muffin cups and top each with a bit of the remaining tablespoon of sprinkles.
  • Bake 12-15 minutes or until springy to the touch.
  • Cool a bit before serving.
