1. Scallion Cauliflower Pancake
This tops my list this week as the absolute best thing ever!
Haha, not really ever, but I've made it about three times for my dinner in the last 1-2 weeks.
It's light and healthy and full of flavor, and, aside from the cauliflower squeezing, easy to make.
It's also a great choice if you're watching your sugar intake or on any stage of the candida diet. I like to dip mine in yogurt, but it's great on its own as well.
2. Low Sugar Peanut Butter Fudge
I tolerate peanut butter in very small amounts, but I'll take it since I absolutely love the stuff!
I made this fudge as the antithesis to all the high sugar versions in circulation.
The added coconut butter adds a natural sweetness, so I only add in two teaspoons of maple syrup to make the whole batch.
3. Zucchini Rice Casserole
I really enjoyed this one, but the fam didn't...
The girls are actually giving me some trouble lately with eating anything I make, so I've just kind of come to the point where 'I make what I want and tough if you don't like it'. This dish falls right in line with that mentality.
Brown rice, chopped zucchini, scallions, parsley, and eggs all combine for an easy and light recipe. I top it with some grated parmesan for a nice crust.
4. Homemade Croutons
One of my favorite things to attempt is homemade bread, but a lot of my gluten-free trials end up failing miserably, a recent buckwheat variety being the perfect example.
Instead of tossing the entire loaf, I cubed it and turned it into some of the best croutons ever!
After cubing, I tossed the squares with garlic powder, olive oil, salt, and pepper, and baked them for about 20-25 minutes at 425 degrees. These are delicious atop a salad, and the girls actually liked them!
5. Spicy Cabbage Soup
Whenever my digestion is 'off', I make a big batch of this Spicy Cabbage Soup.
I eat it throughout a couple of days, and it really helps fix any bloat I may have. It's also delicious and low in calories!

Lol! I love rosehip oil, after using it for only a day or two, my husband commented on how good my skin was looking, which he never does. Yes, the Vitamix is so awesome, why did I wait so long?! ๐

OK I am going to need the Scallion Cauliflower Pancake recipe likeee tomorrow ๐ Organic heads of cauliflower were on sale at Whole Foods, so I bought a couple and have 1 left to make those pancakes! As far as the Zucchini Rice Casserole, I already decided that when I have kids and they want to whine about food I am just going to tell them "you don't have to eat it or eat anything, but it will be in the fridge waiting for you when you are hungry." I swear we are twins and I wish we lived closer ๐ I never let my recipes that turn out nasty go to waste either. I either mush them into some of the best veggie burgs and have made more breadcrumbs than I can count out of failed socca and savory muffins lol
